Ciabatta Bread
- 1 kg of flour
- 60 gr of fresh yeast
- 2 teaspoons of salt
- 80 cc of olive oil
- 600 cc of warm water
Put the flour and yeast in a bowl and mix. Make a hole in the center and add the olive oil.
Gradually add water as you knead and salt.
Knead on a counter for 15 minutes and form a bun. Let it rest for 20 minutes and fold the bun on itself making folds on its 4 sides.
Cover with a cloth and leave to rise in a place at room temperature until its volume increases twice.
On a lightly floured surface, flatten the dough with your hands, until it is about 2 cm thick.
Make cuts of the size you want and cover the dough for approximately 1 hour.
Flatten the dough with your hands until it is 2 cm thick and let rise again for 1 more hour covered with a cloth.
Preheat the oven to 220 ° C.
Before putting the loaves in the oven, sprinkle the top of the dough lightly with flour.
Place a container full of boiling water at the base of the oven so that the bread receives steam while it cooks.
Bake for approximately 20 minutes.
